Delicious Breakfast Frittata

This Frittata recipe is so delicious, easy to prepare, and simply a beautiful dish to serve for your family and loved ones. It can be made with wide variety of ingredients, but I found that the most delicious combination that my family loves are fresh pumpkin, salmon fillet, and asparagus! Enjoy this protein-packed meal!

Since our family has become a homesteading family, we have embraced nearly 80 chickens under our care. It was one of my dreams to have farm-fresh eggs to use in my from-scratch meals in unlimited amounts, and I am most grateful for that. Now, we daily enjoy delicious meals with eggs, including frittatas, shakshouka, omelets, poached egg sandwiches, and quiches.

My family enjoys a wide variety of vegetables in our frittatas: zucchinis, eggplants, cauliflower, chicken, fish, different varieties of cheeses, and milk products. But the most important ingredient in frittata is, of course, eggs. We have a cute Amish Farm Market fifteen minutes away from our home, and their fresh vegetables make all my homemade meals taste so much better and richer. If you don’t have a garden to harvest your own vegetables and eggs, consider visiting a local Farm Market. Fresh, locally sourced produce will make a remarkable difference in the flavor of your meals.

Fresh Pumpkin – I absolutely loved the very unique, delicious combination of slightly sweet pumpkin mixed with feta cheese, salmon fillet, and asparagus. It has a rich flavor that you could definitely taste in restaurants.

Salmon Fillets – Of all other fish choices, salmon is my favorite, and it just adds a rich nutritional value of healthy fats and protein.

Asparagus – If you don’t like asparagus, you can definitely substitute it with green beans or sweet peas.

Greek Yogurt and Cheese – you can experiment with different varieties of cheeses, but in this recipe, I love to use feta cheese.

Spices – Vegetables on its own add a rich flavor, but I do love adding dried garlic and turmeric. I sprinkle frittata with fresh parsley and microgreens before serving.

How To Make Frittata

Step 1: Heat olive oil in a cast-iron skillet. Peel and cut the pumpkin into cubes, and sauté until half-cooked. If you are using a fresh pumpkin that cooks fast, then you can omit this step.

Step 2: Cut asparagus and salmon fillet into small pieces. Grate cheese or crumble feta. Whisk eggs with Greek Yogurt, add salt, and your favorite spices.

Step 3: In your cast iron skillet or any deep oven-safe dish, add pumpkin, pieces of asparagus and salmon, you can also add cooked chickpeas or green peas. Pour over with egg mixture.

Step 4: Preheat the oven to 350 degrees F. Bake frittata for about 15-20 minutes, then sprinkle with cheese and continue baking for additional 5 minutes until it has golden brown crust.

Step 5: Serve Breakfast Frittata hot with fresh parsley or microgreens.

  • 150 g butternut Squash or pumpkin
  • 150 g fresh salmon fillets
  • 150 g asparagus or green beans
  • 100 g Greek Yogurt
  • 4 eggs
  • 50 g feta cheese or hard cheese of your choice
  • salt to taste

  • parsley dill, basil, or herbs of your choice to serve

Adjust the thickness. All your vegetables should be saturated in the egg mixture, so that vegetables don’t dry out in the oven.
